Soups and salads are a blank slate, perfect for showcasing a variety of lean proteins and a rainbow of fruits and vegetables… not to mention a great way to use up leftovers! Understanding some basic formulas and rules of thumb, you can create any delicious soup, salad or dressing that you can dream up.


Techniques we will learn and practice include knife skills, sautéing and sweating vegetables, stock-based and cream soups, salad composition, salad dressings and more.

SUMMER MENU

  • Meal 1: corn chowder, BLT+ salad with creamy herb dressing

  • Meal 2: Italian wedding soup, panzanella salad
